Talking about his career, after college, he stayed in Ohio and worked as a graduate assistant at Bowling Green State University from 2003–2004. Then, the head of player personnel for the New England Patriots offered him an interview for a job at the team, but Campbell denied it. Campbell came back to Mount Union for 2005–2006 as offensive coordinator and subsequently won the Division III championship both years.

After that, he went back to Bowling Green for two years, first as offensive line coach in 2007 and then as offensive line coach/run game coordinator in 2008. Moreover, Campbell was hired by the University of Toledo as the run game coordinator for the 2009 season.

Toledo

In 2010, Toledo promoted Campbell to offensive coordinator. At the end of 2011,  Toledo made him the permanent head coach when Beckman departed for the University of Illinois. After working for two weeks, Toledo beat Air Force in the Military Bowl. He coached four full seasons at Toledo: 2012–2015, making a record of 35–15.

The 2015 team peaked at Number 20 in the AP Poll, with a victory over Arkansas. On November 29, 2015, Iowa State University made Campbell its head coach replacing Paul Rhoads. He signed a six-year, $22.5 million attachment with the school on November 27, 2017. Campbell was also named the Big 12 Coach of the Year two times.

In his second year, Campbell coached Iowa State to an 8–5 season with wins against #3 Oklahoma and #4 TCU. He led the Cyclones to a second 8–5 season during his third year at Iowa State which included a 6–3 record in Big 12 play.

In the global-shortened 2020 season, Campbell coached the Cyclones to their best season in decades. The Cyclones ended in first place in the Big 12, their first regular-season first-place finish of any kind in 119 years.

Iowa State announced a new contract extension for Campbell through the 2028 season on February 8, 2021. It was reported that the Detroit Lions gave Campbell an eight-year, $68.5 million deal for their head coaching position in 2021.

Matt Campbell has won many awards throughout his career. In 2015, he earned the MAC Coach of the Year Award. He won the Big 12 Coach of the Year Award three times in 2017, 2018, and 2020. Similarly, Campbell won the AP Big 12 Coach of the Year Award two times in 2017 and 2020.
